It’s that time of the year again… Holiday parties and celebrations! And we know that, in our culture, when there is a celebration, there is also food. Yum!

Today I bring to you a healthy alternative to the gingerbread cookies that are perfect for sharing with friends and family and showing them how delicious healthy eating is.

Gingerbread Cookie Bites

Ingredients:
1 cup nuts (cashews, almonds, walnuts, or a combination)
1 cup shredded coconut
1 1/2 cup dates
1 Tbs grated ginger
1 tsp cinnamon
Pinch of salt, nutmeg, and cloves
1/2 tsp vanilla extract
Process all the ingredients in a food processor until it still together, adding water (1 Tbs at a time) as needed.
Roll the mixtures into “bites” and voila!
